Hope everyone had an awesomeeee weekend… 😀 I’ve been so stuffed with good food that I feel like a stuffed Christmas turkey! And this blog entry is about.. MORE GOOD FOOD!
Jess invited me along to a food tasting dinner at Majestic Bay Seafood Restaurant, which is located at Gardens by the Bay.. Have you been to Gardens by the Bay yet? I’ve only gone there a couple of times, and I actually think it does look quite cool, especially at night! Bet you didn’t know that there are restaurants inside Gardens by the Bay.. and I was pleasantly surprised to find out about Majestic Bay Seafood Restaurant too 🙂
Gardens by the Bay, at night. Kind of looks like an alien landscape, but it’s beautiful! Walk a short distance to the Flower Dome, and you’ll find Majesty Bay Seafood Restaurant situated in a scenic corner of the Gardens.
Majestic Bay Seafood Restaurant is helmed by Chef Yong Bing Ngen, who is known for Majestic Restaurant and Jing @ One Fullerton. With an extensive array of live seafood as well as a dim sum menu (only available during the day) as well as other signature dishes that are uniquely concocted by Chef Yong Bing Ngen, Majestic Bay Seafood Restaurant is definitely one restaurant you’d have to bring your family to, for a visit.
The interior is spacious and soothing to the eyes, with a pleasing color palette of white and tiffany blue, which I thought was a very nice modern touch which made the restaurant look classy and elegant without being too “obiang” (traditional) like most Chinese cuisine restaurants tend to look.

Couldn’t get enough of these wasabi chips that were being served as an appetizer.. The wasabi kick to it really whet my appetite and I had to stop myself from reaching for more so that I could leave some stomach space for the actual main courses! 😛
There’s a variety of chinese teas offered, and we got ourselves a pot of chrysanthemum tea 🙂

辣椒蟹生煎包 Seared, chili crab meat bun ($4.50 for 3 pcs)
This was quite a novelty to me, as I’ve definitely never tried chilli crab in this manner! I really enjoyed the crisp exterior of the seared bun, with a generous coating of roasted sesame seeds that really added flavour and crunch to the bun. I thought that the flavour of the chilli crab didn’t come through enough though! If I did not know that this was supposed to be chilli crab, I might not even have realised it. Hahaha.
Nevertheless, it was a tasty bun! 😀
香菇蒸烧卖Steamed, siew mai dumpling ($4.50 for 4 pcs)
The siew mai was definitely one of the better ones I’ve tried! It was fresh, and was just the right bite-sized portion. Firm and crunchy meat filling too!
上海小笼包 Steamed, shanghai dumpling, pork ($4.20 for 3 pcs)
The xiaolongbao was another tasty dimsum item that I would order again at Majestic Bay. The dumpling skin was just the right thickness and I enjoyed slurping this up with vinegar and shredded ginger. It has got to be eating piping hot though for maximum shiok-ness!
瓦煲老火汤 Soup of the day ($18 for 2-4 pax, $27 for 5-8 pax) – Arrowroot Soup
There is a different 炖汤 on the menu everyday, and we tried the Arrowroot Soup which was just the way I like my soups: flavorful and rich!

金银蒜蒸开边生虾Steamed, live prawns, minced garlic (Market price)
For the prawn lovers, this dish is a must-try! Fresh prawns steamed with fragrant minced garlic and lots of chives and garnishing over it! The prawns were extremely fresh and sweet, and the minced garlic really added an extra oomph to the sweetness of the prawns! Jess and I were practically fighting over the last prawn! Hehe.
The star dish of the night! 冠华咖啡焗肉蟹 Live crabs, Bay’s signature “Kopi” sauce (Market price)
Otherwise known as the flaming Kopi crab! This dish is Chef Yong’s very own creation, prepared with Arabica, Brazilian and White Coffee beans and later caramelised with Apple Jam and Butter, then infused with Rice Wine Spirit and served lit with a blazing flame that is certainly an impressive sight! The distinctive aroma of coffee will permeate your senses as you bite into the succulent crab meat.
I really liked the caramelised kopi sauce, but it was quite hard to enjoy this dish as the meat had a tendency to stick to the shell (perhaps due to the high temperature of the flame?) However, it is really one of Majestic Bay’s most memorable signature dishes that deserves a try!
海鲜大烩焗饭 Baked rice, assorted seafood, chef’s recipe sauce ($68 for 4-6 pax, $88 for 7-12 pax)
This has got to be one of my favourite dishes from our food tasting session! I was already feeling pretty full by this point of time, and when the waitress placed this huge dish of baked rice on our table, I thought to myself that no way would the three of us (Jess, myself, and Janice, the PR-in-charge) be able to finish it!
Well, we didn’t manage to finish every bit of it, but I have got to say we demolished off a fair bit of this, considering that it’s meant for 4-6 pax and there were only three of us!
This dish is indeed a gem! Inspiring from Portugese cuisine, the rice is first fried for fragrance, and then baked in a rich sauce that was extremely savoury and tasty: it reminded me of Japanese curry, only tastier! Hidden in the sauce are fresh seafood ingredients such as baby abalones, scallops, prawns, mussels and more, which were a delight to “unearth” whilst enjoying every bite of this sumptuous dish! This dish is best enjoyed shared amongst 4-6 persons (for the smallest portion) and if you enjoy communal dining, it will be a delight to savor this delicious dish with your loved ones.
We finally concluded the delicious meal with a selection of desserts!
甜 品诱惑 Sweet’s temptation ($20 for 4 pax)

Steamed Custard Bun, Salted Egg Yolk;
Bay’s Chinese Pancake, Red Bean Paste
I thoroughly enjoyed the Glutinous Rice Dumpling with Fresh Cream Stuffing, which was so soft and light that it practically melted in my mouth! The Steamed Custard Bun with Salted Egg Yolk did not quite live up to my expectations as the flavor and texture of the salted egg yolk filling was not rich enough for my liking 😛 The Bay’s Chinese Pancake with Red Bean Paste and Glutinous Rice Dumpling with Yam Paste Stuffing and Shredded Coconut were good, but not memorable in my opinion.
